Ingredients For South Indian baingan curry with chapati recipe

Methods
  • 1. Take a brinjal, clean, wash and make cut through middle.
  • 2. Now marinate this brinjal with salt and turmeric.
  • 3. Keep this aside for 5 mins. Then heat kadai, add 2 tablespoons of oil, put this marinated brinjal and shallow fry it.
  • 4. Put the fried brinjal aside. Now heat the oil, add hing, curry leaves and mustard seeds.
  • 5. Let it flutter, add green chili, garlic paste n Onion.
  • 6. Then add tomatesn let it cook. Meanwhile dry raoast the whole masalas along with peanuts.
  • 7. Make fine powder.Then add 2 tablespoons of freshly grinded masala, turmeric and chili powder. Finally add salt.
  • 8. Mix it and cook the masalas, till it leaves oil.
  • 9. Now add brinjals and add required amount of water. Cook for a while, till brinjal simmers.
  • 10. Its gravy remains thick. Now add jaggery and tamarind paste .Cook for a while and serve with chapati.
