Ingredients For Achari Risotto Recipe

Methods
  • 1. Heat oil over a medium flame. Add bellpeppers and mushrooms. Stir fry for 2 minutes and remove them from the pan.
  • 2. In the same pan, add garlic and saute till its color changes. Add onions and cook it it turn golden.
  • 3. Add tomato puree with spices and pickle paste. Mix well and cook for 3-4 minutes.
  • 4. Add boiled arborio rice and stir fried vegetables. Mix well and cook for 1-2 minutes.
  • 5. Lower the flame, add cream and half of Parmesan cheese. Cook for 2-3 minutes till cheese gets melted. Remove from the flame.
  • 6. Crush the papad and mix it with remaining half of parmesan cheese. Sprinkle it over risotto before serving.
