Recipe Notes

You can sprinkle nuts when it is cooling and press them over the barfi a bit. Milk and sugar can be replaced by condensed milk. Addition of chocolate or cocoa powder will enhance the colour and flavor.

Methods
  • 1. Heat ghee in a pan and add grounded walnuts in it and start roasting.
  • 2. Simultaneously on the other flame keep milk to boil. Add sugar, saffron and cardamom powder to it.
  • 3. Don't reduce the milk, just mix well and turn off the flame.
  • 4. Roast walnuts till they get a beautiful aroma.
  • 5. Add hot milk to roasted walnuts with continuous stirring so that no lumps form.
  • 6. The mixture will splutter, but keep mixing. Don't reduce a lot.
  • 7. Off the flame and spread it over a dish and cut it when it cools.
