1.
Take a small bowl and mix together coriander powder,red chili powder , turmeric, Garam masala, coriander powder, Salt, Black pepper powder , Jeera powder, onion garlic paste, Black pepper powder . Keep it aside till required.

Now wash cauliflower in running water and cut it into small florets in a bowl

Heat oil in the kadhai on medium flame.

Now add cauliflower (gobhi) florets ,potato(aloo) wedges, peas, carrot in the kadhai. Stir fry the vegetables for 5 minutes.

Now transfer the vegetables in another bowl.

In another Kadhai, heat oil on medium flame. Now add all the spice mixture in it.
7.
Now add the tomato puree mixture along with the prepared spices masala, and stir until the oil separates.
8.
Now add all the vegetables to the Kadhai and mix well.Keep it on medium flame for 10 minutes.
9.
Now pour water in it and cover it with lid for 15-20 minutes.
10.
Now Transfer aloo gobhi matar to a serving dish and serve hot with paratha, poori or rice.
