1.
At first cut the brinjal lengthwise, marinate with salt & turmeric powder & shallow fry it.

In another pan dry roast the peanuts, dry red chilli, desiccated coconut & then make a paste of it adding little water.

Heat 1tbsp oil in a pan now.Then add sesame seeds & cumin seeds.Let it crackle & then add chopped onion & ginger garlic paste.Saute it for few minutes.

Then add peanut mixture paste ,salt & all spices.
5.
Add tamarind paste & jaggery.
6.
Add fried brinjal , cover it & let it cook.
7.
After few minutes add a cup of hot water.
8.
When oil will start to separate from pan , check salt & gravy.
