Baked Rosomalai Recipe

"ROSOMALAI" or "RASMALAI" is a very famous Indian dessert that we all love and being a Bengali, sweet is something that always be an feature to make any meal delectable. So here I have given a twist to this traditional Indian dessert.

Recipe Notes

Sugar level of the recipe can be adjusted as per taste while making the sugar syrup and rasmalai. Any nuts of your choice can be used in the recipe. While baking keep an eye else there is a chance f burning the whole dish.

Ingredients For Baked Rosomalai Recipe

Methods
  • 1. For Making Chenna- In a pan take 1litre of milk and bring it to a boil and turn off the oven or the gas.
  • 2. In a small bowl take 2.5tbsp of vinegar & 4tbsp of water. Add in the mixture in the milk and mix it.
  • 3. The milk will start to curdle. Strain of the excess water and take the chenna in a cheesecloth.
  • 4. Wash the chenna with cold water and drain off the excess water from the chenna by hanging the cheesecloth for 20-25minutes.
  • 5. Making of Chenna Balls- Take the chenna in a plate add in 1tsp of cornflour. Start kneading the chenna with the palm of your hands so that there are no lumps.
  • 6. Make small cyinders or balls of chenna and keep it aside.
  • 7. Making of Sugar Syrup- In a pan or kadhai take 4 cups of water & 1 cup of sugar. Add in 2-3 pods of green cardamom in the water.
  • 8. Bring the water to a rolling boil. Add in the chenna balls in rolling boiling water.
  • 9. Cover the pan & poach the chenna balls for about 15-20minutes on a medium high heat. The chenna balls will double in size.
  • 10. Turn off the heat and keep it covered.
  • 11. Making of Rasmalai- Take 500ml of milk in a pan and bring it to a boil. Add in 2-3 pods of green cardamom and reduce the milk to half.
  • 12. Add in 3-4tbsp of sugar to the milk and boil it. Add in few strands of kesar in the boiling milk.
  • 13. Add in the poached chenna in the reduced milk and add chopped nuts of your choice. Boil every thing for 10-15 minutes until the milk becomes little thick.
  • 14. Turn off the gas and add in 1tsp of rosewater. Preheat the oven at 160 degrees.
  • 15. In a baking dish place the chennas and add in the milk. Place the dish in the oven and bake it for about 10-15minutes or until you get a brown baked surface on top
  • 16. Garnish with few starnds of kesar and chopped nuts of your choice.
  • 17. Cool in the refrigerator & enjoy.
