It is one of the easiest rice recipes that make for a wholesome meal. It is quick and has many variations like peas pulao, mushroom pulao, paneer pulao etc. This variation of colorful vegetable pulao has mixed vegetables making it more healthiest. If you are someone who likes it spicy, you can add some red chilies before stir frying the veggies, this will spice up your rice delicacy. A complete meal for vegetarians, you don't need any side dish with this pulao recipe. To make this vegetarian recipe in the traditional way you can prepare this dish with ghee, this will make this pulao flavoursome and delightful. Another to way accentuate the taste and aroma of this recipe, you can dry roast the spices, grind it and then add it to the Pulao. This is a great party recipe for a large gathering, serve it with raita and papad. This traditional recipe can be garnished with a handful of nuts, freshly chopped coriander and green chilies. Rice is one the main ingredients of this recipe, to make the rice soft, you can can soak it for two-three hours and then cook it, this makes the rice soft. Apart from being tasty, this pulao recipe is full of nutrients as it has almost all green veggies. You can also make this pulao on special occasions like kitty parties, house parties or even for a lazy sunday brunch. Try it and enjoy!

Methods
  • 1. Soak rice, rinse till the water runs clear of starch and become transparent while rinsing. Soak the rice in enough water for 30 minutes. Drain all the water and keep the soaked rice aside.
  • 2. Making rice: take pressure cooker add rice and just double water and add salt and 1 tbsp ghee in it , preesure cook it for 1 whistle on medium flame. Then switch off the flame and keep aside.
  • 3. Making pulao: in a deep thick bottomed pot or pan, heat ghee or oil and fry all the whole spices mentioned above, till the oil becomes fragrant add the onions and saute them till golden. saute the onions on a low flame and stir often for uniform browning. Add the ginger-garlic-green chili paste and saute for 10 to 12 seconds. Add the tomatoes and saute for 2 to 3 minutes on a low to medium-low flame.
  • 4. Add all the veggies and saute again for 2 to 3 minutes on a medium-low flame.add black pepper powder and salt mix well.than add boiled rice and mix well. Sprinkle 6 to 7 drops of lime juice or lemon juice and stir again. Serve the veg pulao hot with some side salad, sliced onion & lemon wedges or raita. you can also garnish it with chopped coriander or mint leaves.
