The fried or roasted garlic and coriander root is the star of this soup. So is a must must addition. In case you don't have button mushrooms you can add shitake or any other.

Ingredients For Leftover Rice and Chicken Soup Recipe

Methods
  • 1. Bring 4 cups of water to a boil.
  • 2. Add crushed garlic cloves and ginger pieces.
  • 3. Add coriander root and stem and chicken pieces.
  • 4. Now boil until chicken is nicely cooked.
  • 5. Add boiled rice and Salt and Black pepper.
  • 6. Add the mushrooms and Soya Sauce and bring to a boil.
  • 7. Taste to check if anything needs to be added more accordingly.
  • 8. Serve in a bowl and garnish with Ginger Julians and chopped coriander leaves.
  • 9. Add roasted or fried garlic and chopped spring onion leaves.
