Methods
  • 1. Preheat the oven at 180 degree celsius, and line a square tin with a parchment paper.
  • 2. Place the butter and caster sugar in a large bowl and beat together, then gradually add in the eggs and whisk until pale and fluffy.
  • 3. Now stir in the lemon rind, followed by maida, and fold it into a mixture.
  • 4. Then stir in the milk, and fold again.
  • 5. Spoon the mixture in the lined tin, smoothing the top.
  • 6. Put it to bake in the preheated oven for 25-30 minutes or until golden brown and firm in touch.
  • 7. Meanwhile, prepare the syrup: add icing sugar in a pan and pour in the lemon juice, and heat gently, stirring continuously, until the sugar dissolves. But do not boil.
  • 8. Once baked, let it cool down a bit, then prick the cake with a skewer,and drizzle some hot lemon syrup onto it, allowing it to absorb.
  • 9. Leave it to cool completely then dust it with some icing sugar, cut it into squares and serve.
