Nargisi Kofta with Leftover Veggies Recipe

Whenever we make mixed veg soup at home,we are left with lots of veggies after the vegetable stock is extracted.Do you throw them away? These veggies can be used in various ways. One of the ways is making malai kofta without paneer or even cream!! Different from the traditional malai kofta,but better in taste.So the name ` Nargisi Kofta'.

Ingredients For Nargisi Kofta with Leftover Veggies Recipe

Methods
  • 1. Add oats and bread crumbs and some salt to the veggies to make a binding dough.
  • 2. Pinch out some material from this dough and shape into lemon sized ball.In the same manner make balls from whole of the dough.
  • 3. Heat oil and deep fry these balls.Keep aside.
  • 4. Puree onion and green chilli with ginger and garlic.
  • 5. In a pan heat clarified butter and add the onion puree.Saute it till translucent .
  • 6. Add cumin powder and dhaniya powder to this.Again saute for about two minutes.
  • 7. Meanwhile churn curd to make it lump free. Add this to the onion masala and roast on high flame.
  • 8. When it is dried its time to add grinded dry fruit and poppy paste.Mix well.
  • 9. Add milk and salt and white pepper powder. Stir well and let it come to boil.
  • 10. Add garam masala to this. Now let it simmer for some time.
  • 11. When serving put koftas in the serving bowl and pour the hot gravy over the koftas gently.Garnish with coriander leaves and serve hot with any Indian flat bread.

I'm sorry to say but this is not a nargisi kofta... it cannot be. The main ingredient of nargisi koft is egg and that will be a complete non veg dish. Nargisi kofta is one of the dishes from Hyderabad cuisine which is considered be a Shahi (ROYAL) dish.

This recipe looks delicious and I will surely try it out
