Recipe Notes

You can add cherry tomatoes and onions to this as well. I prefer without. If you don't have quinoa, its a good goto salad without it as well

Ingredients For Quinoa Tabouleh Recipe

Methods
  • 1. Cook the quinoa and refrigerate before you start prepping for this salad.
  • 2. This salad is served cold hence the quinoa needs to be cooled in the fridge before being added to the tabouleh.
  • 3. To cook the quinoa first roast the quinoa in a pan by sauteing it in a dash of olive oil.
  • 4. Once the quinoa starts popping and turns slightly browner.
  • 5. Add double the amount of water.
  • 6. A pinch of salt and a dash of oil and let it cook.
  • 7. Once the quinoa is cooked, cool it down and transfer into the fridge or freezer for 20 minutes if you don't have time
  • 8. Now, chop the cucumber, red bell pepper, green capsicum, yellow bell pepper into small pieces.
  • 9. Mix all in a bowl and add the quinoa and pomegranate seeds.
  • 10. For the dressing take olive oil, lemon juice and salt and mix it well and pour it on salad and add cumin powder and mix well.
  • 11. Lastly add all the chopped parsley and give it final mix.
  • 12. Check to add salt if needed and serve. This salad is served cold and best if you let it sit in the fridge at least for an hour before you serve.
