Methods
  • 1. Heat 1 tbsp of olive oil in deep pan over medium heat .
  • 2. Add chopped onion to hot oil with pinch of salt and cook until onion turns translucent.
  • 3. When onion are cooked add chopped carrot and saute for 2-3 minutes.
  • 4. Now add tomato paste and stir for a while.
  • 5. Add cumin seeds,crushed black pepper,dry mint,dried oregano,chili flakes and paprika and stir for a few second.
  • 6. Now add washed red lentil along with 4 cups of water.
  • 7. Add salt to taste ,stir well and bring mixture to boil on high heat.
  • 8. When mixture comes to first boil ,reduce the flame to low .
  • 9. Cover the pan half-way and simmer the mixture for 15 -20,until carrots and lentil are fully cooked.
  • 10. Turn of the heat,and let the soup cooled down a bit.
  • 11. Heat small pan over high heat .
  • 12. Lower the heat add olive oil, paprika and chilli flakes.
  • 13. The moment paprika starts to boil turn of the heat .
  • 14. Pour the soup in serving bowls ,drizzle small amount of paprika oil before serving.
  • 15. Serve with bread slices and some lemon wedges.
