Rice Kheer/Rice Payasam/Paramannam Recipe

Paramannam is a very easy-to-make dessert recipe which requires just a few simple ingredients to get prepared.  This Kheer is a sweet dish which is prepared as an offering to God in almost every home in Andhra on most special occasions and festivals and especially during every house ceremony. Every one can make kheer at home but some can make it more special by adding some magical ingredients.

Ingredients For Rice Kheer/Rice Payasam/Paramannam Recipe

Methods
  • 1. Boil milk till one boil comes.
  • 2. Apply 1/2tsp ghee to rice and add it to milk.
  • 3. Now boil milk alongwith rice for 5-10minutes in low flame.
  • 4. Now place it in a pressure cooker and cook for 4-5 whistles and take off from the flame.
  • 5. Now take it out from pressure cooker and place on flame again and keep boiling it well.
  • 6. Add sugar to it and keep boiling it again.Add condensed milk and mix well and cook it well.
  • 7. Now add 1/2tsp ghee and jaggery to it and cardamom also.Keep boiling till the kheer thickens and take off from flame.
  • 8. Dish it out and garnish with raisins

Should jaggery be added after the kheer has cooled down? Whenever I add jaggery while my kheer is hot ,it splits.

Yes ... Anupa you are absolutely right my mom makes jaggery kheer. She always add jaggery after that kheer has cooled down
I add very little of jaggery so it never happened to me.
