1.
To prepare the dough for Sattu Ki Khasta Kachori, take all purpose flour or maida in a deep vessel. Add salt or namak, carrom seeds or ajwain and onion seeds or mungrel to it. Mix the dry ingredients well. Now add 3 table spoon refined oil to this dry mixture. Mix as if forming a dough.

When the ingredients begin to bind together then start adding water slowly to the flour mixture to prepare a medium soft dough for Sattu Ki Khasta Kachori. Knead the dough well and make a medium soft dough for Sattu Ki Khasta Kachori. Remember that the dough prepared for Sattu Ki Khasta Kachori should neither be very hard nor very soft, but only medium soft. Then cover the dough prepared and leave it to rest for 30 minutes.

Now take one big plate or a bowl and add sattu to it. Add finely chopped onion, ginger, garlic, green chilli and coriander leaves to it. Then add carom seeds and onion seeds to it, and mix the dry ingredients well. Now add 2 table spoon mustard oil and salt to this sattu stuffing mixture and mix all ingredients well.

Crumble the sattu stuffing mixture nicely and check if it begins to bind. If the mixture appears dry then add 2 table spoon water to this sattu stuffing mixture and crumble again. Remember that this sattu stuffing mixture for making Sattu Ki Khasta Kachori should neither be very dry nor very moist in texture.

Now take dough for making Sattu Ki Khasta Kachori and knead it again to smoothen it. Then prepare small balls of the size of lemon out of it. Smooth all the balls nicely. Then take one ball and make depression at it centre like a bowl with the help of your thumb and fingers (as shown in the image below).

Now place some Sattu Ki Stuffing in this depression and then bring the sides together to form a pouch. Then roll and smoothen it like a stuffed ball.

Place one stuffed ball on your palm and press it slightly with your hand. heat some refined oil for frying the Sattu Ki Khasta Kachori in a kadhai. Reduce the flame to medium level when the oil is heated completely.
9.
Then transfer the Sattu Ki Khasta Kachori to it to fry until it turns golden brown on both the sides.
10.
Serve hot Sattu Ki Khasta Kachori with spicy curry dish like dum aloo curry or sauce.
