Recipe Notes

Quantity of liquid varies with flour.So use water and milk in small lots.Oven temp and time varies .Keep an eye on your bake. If you feel,you can heat your buns for 30 seconds in microwave before eating.

Ingredients For Soya N Paneer Rose Buns Recipe

Methods
  • 1. Mix water and milk ,and warm this.
  • 2. Mix half of this solution and honey to yeast.Cover and keep aside to bloom for about 15 minutes.
  • 3. Now add this solution to the flour along with salt and Knead a soft dough.
  • 4. Dust your counter top with flour and transfer this dough onto it.
  • 5. Add 2 tbsp oil to the dough and again kneed it for at least 10 minutes using stretch and fold method. Initially the dough will be sticky but gradually it will become soft and pliable.
  • 6. Lightly grease a bowl and place the dough in it. Brush the dough with oil.
  • 7. Cover the bowl with cling wrap and keep in a warm place for first rise for about 40 minutes or till it doubles in volume.
  • 8. Meanwhile heat 1 tbsp oil in a pan and add jeera to it. When it crackles add onion and garlic and saute.
  • 9. Now add tomato and other veggies to it along with paneer and soya granules. Add salt and stir fry till all moisture gets evaporated.
  • 10. Add spices and cook for 2 minutes. Remove from flame and let the mixture come to room temperature.
  • 11. Divide it in 8 equal parts. Keep aside.
  • 12. By now the dough will double in volume.Gently knock down air from it.
  • 13. Kneed it gently for a minute and divide in 8 equal parts.
  • 14. Roll one part into a thick poori.Place one part of stuffing in the centre.
  • 15. With a sharp knife make four cuts on the empty space of poori in such a way that it is divided into four equal parts.Be careful not to cut the stuffed part.
  • 16. Now fold one part over the stuffing.This is the first petal of the rose.
  • 17. Next fold its opposite part over the stuffing.This is the second petal.
  • 18. Next fold the third petal over the stuffing.It will overlap the first two petals.
  • 19. Now fold the last part over these three petals and press the ends gently under the flower.
  • 20. In the same way make all the eight roses.Place them in a greased baking tray.
  • 21. Brush oil over the roses and sprinkle nigella seeds.
  • 22. Cover with a kitchen cloth and let it rise again for about 40 minutes.
  • 23. Once 10 minutes are left preheat oven at 200 degrees.
  • 24. Brush milk on the roses and bake for 40 minutes or till golden brown.
  • 25. When baked take them out and immediately brush with melted butter.
  • 26. Cover with a damp cloth and let cool.This will soften the buns.
