White Lobia/Black Eye Pea Stew Recipe

I prefer a rich breakfast with a lot of veggies and all the goodness as for the other meals I'm either busy to focus on the nutrient content or have meat. This version is for all those who do prefer something savoury for their breakfast. Also including all the goodness for breakfast keeps your day going strong. The flavors are light yet completely satisfies all the taste buds. It can be had as a bowl of soup or with dosa/appam for breakfast or with steamed rice for lunch. . . White lobia a native of Africa is an excellent source of soluble fiber which helps keep the cholesterol level in check and with good digestion. It is also a low glycemic index food which is ideal for diabetic patients. Addition of other vegetables to the stew enhances the nutrient content.

Recipe Notes

Make sure not to over cook or colour the onions to prevent change of color of stew. Also mash potatoes well it is used to thicken the stew to give it a little thick soup consistency.

Methods
  • 1. Soak lobia overnight and boil. Also boil 1 medium size potato and mash.
  • 2. Slice onions. Julienne ginger, chilli and garlic.
  • 3. Cut beans aand carrots according to your convenience.
  • 4. To a pan add coconut and vegetable oil. Once it heats up add fennel seeds and ginger julienne.
  • 5. Follow with onions, chilli and garlic. Saute for a minute.
  • 6. Steam beans and carrots in prior to preserve nutrients.
  • 7. Add steamed beans ,carrot and saute for further 1 minute
  • 8. Add lobia and mashed potato, lower flame and season with salt.
  • 9. Add coconut milk and cook for not more than a minute. Turn flame off and check for seasoning.
