  2. It can be added to whipped cream, frostings and fillings to help them stabilize and extend their shelf life.
  3. It can be used to improve whipping and foaming properties in vegetable fat-based creams.

Description

Acetylated monoglycerides (AMG) are non-ionic, fat soluble surfactants, or functional additives in which acetic acid is connected to the monoglycerides, widely used in baking and other food formulations. They are acetic acid esters of monoglycerides prepared by the acetylation of monoglycerides and acetic anhydride(without using any catalyst agent). They can be synthesized through the interesterification of the edible fats along with triacetin( in the presence of catalytic agent). They appear as clear liquids to solids, from white to pale yellow in colour. They are widely used for its emulsifying properties mainly at higher temperatures. They are used in cake mixes, toppings and whippable emulsions. They act as volume enhancer in baked goods, consistency enhancer in milk products and viscosity enhancer in chocolate products.
