Description

Acidity Regulator (INS 262) is the sodium salt of acetic acid in the form of a colorless solid . It is a natural acid present in most fruits and can also be produced by bacterial fermentation. It is used as food additive, given the E-number E262. It can be used as an acidity regulator to change and maintain the acidity, thus acts as a neutralizing agent for basic or alkaline foods. It can also be used as a preservative, pickling agent and as a flavour-enhancer.
