Acidity Regulator (INS 327) is the calcium salt of lactic acid(a natural acid produced by the fermentation of lactose) in the form of water-soluble, white crystalline salt. Commercially it is produced from the action of lactic acid on calcium carbonate. It can be used as a food additive in the form of a preservative, acidity regulator, and anti-microbial agent.
