Description
Arico cheese is a rare variety of hard goat's cheese. The Canary Islands manufacture some of the best varieties of cheese in the world. The temperate climate of the islands favours the breeding of goats and specifically a breed called Majorera as goats are made to graze on marjoram, from which the name has been derived. Arico cheese is produced from this breed of goats which are mostly found on the island of Tenerife, in the town of Arico. This cheese has a reddish-brown rind which develops from being brushed with olive oil, paprika, and gofio (a variety of toasted cereal). It is matured for around 6 months and develops a dry, grainy texture with a unique and robust flavour, which has made it a trophy winning cheese.
