  1. Bixin is one of the most popular natural colorings used in food industry to provide color to different products requiring a tone that may vary from yellow to brown.

Description

Bixin is a natural food coloring obtained from the seeds of the achiote tree (Bixa Orellana) commonly called annatto. Around 70-80% of bixin is present naturally in the pigments of annatto seeds. It is a chemically unstable compound that converts via isomerization into trans-bixin (β-bixin) which is a double-bond isomer.

Note

Bixin being a potential allergen can cause allergic reactions leading to problems like hives; difficulty in breathing, swelling of face, lips, tongue, or throat, nausea, diarrhea, drowsiness. Pregnant and lactating women and children below the age of 6 years should not be given bixin without any medical supervision. (1)
