Description

Blue Pea Extract is a bright blue liquid concentrated extract from the butterfly pea flower of a climbing plant, Clitoria ternatea Linn. originating from Southeast Asia. It is used as a blue food coloring(derived from anthocyanins) agent in food and drinks. It has the ability to change colors depending on the pH of any ingredient added to it. Its color to violet and further to pink, in acidic liquids.
