Description

Stock is a liquid flavoring base, prepared by simmering animal bones or meat, fish, or vegetables in water. Brown stock is a stock prepared either from bones of veal or beef, or from a mixture of meats including beef that has been roasted. The roasting produces brown color and unique flavour.
