Description

In appearance, butter beans are kidney-shaped and they are available in cream, off white or yellow color. Some of the varieties are even available in red, purple, brown, black or white color. They are most often associated with succotash, a traditional Native American dish that combines this delicious bean with corn.

Do not eat raw beans as they have linamarin which is a highly poisonous substance. Overconsumption of butter beans can cause nervousness, migraine, stomach problem due to presence of amino acid called L-tyrosine.(2)
