Description

What is cellulose gel?

Also known as cellulose gum, cellulose gel is a plant based stabilizing agent used in many foods, supplements and pharmaceuticals. In other words, cellulose gel is simply a refined version of Insoluble fiber found in everyday fruits and vegetables. It is produced from the structural parts of certain plants, primarily trees or cotton.  With rising awareness about fiber intake, cellulose has become one of the most popular food additives. 

Where is it used?

  • Cellulose gel is often added to increase the fiber content of drinks and other liquid items to overcome the gritty texture.

  • Due to its ability to add bulk in the diet, cellulose has become a popular bulking agent in diet foods.

  • Cellulose gel is often added to sauces for both the thickening and emulsifying action.

  • It is used as an anti-caking agent in shredded and grated cheeses, spice mixes, and powdered drink mixes.

  • Because cellulose gum helps food remain moist, particularly after cooking, it is commonly used in baked goods to help ensure a moist and delicious final product.

Where to look for it?

As cellulose gel is a very functional ingredient, very little cellulose gum has to be used in the foods to achieve the intended effect. It can be found on ingredient lists under a variety of names, depending on which form is used. It may also be found on ingredient lists under the names carboxymethylcellulose, microcrystalline cellulose, or MCC.
