When buying chilli garlic oil in packaged form, check for its expiry date before purchasing. When making at home, go for a mild flavoured oil (so that the oil doesn't over power the flavour). Look for fresh garlic cloves for infusion and avoid those with damp or soft spots.

Description
Chilli garlic oil is oil infused in red chili flakes, garlic cloves and salt on a low heat flame for 4-5 minutes. The mixture is allowed to steep for an hour as the flavors infuse. The oil can be strained, discarding garlic gloves and herbs for a longer shelf life and more refined appearance. It can be used as a dipping oil and as a finishing oil at the end of a recipe to add flavor.
