Coagulating Enzyme (Veg) is an enzyme that catalyzes the conversion of soluble proteins into insoluble ones. These are basically vegetarian enzymes like vegetarian rennet(used to make vegetarian cheeses to aid in the coagulation process), not obtained from animal sources. They are obtained from microbial or plant sources.
