Description

Dairy whiteners are prepared by spray drying of cow/buffalo milk or a mixture followed by removal of liquid from the milk. Further, a certain quantity of sugar is added so that it can be readily used for making tea or coffee. Usually, dairy whiteners contain around 20 percent added sugars. Often dairy whiteners are confused with milk powders. It is very important to know the difference between the two of them. Powdered milk or milk powder is made by the evaporating milk to dryness. A dairy whitener has more sugar compared to milk powder. Secondly, a milk powder gets lumpy when it is mixed with liquids whereas a dairy whitener dissolves smoothly than milk powder.
