Description

DATEM (Diacetyl Tartrate Ester of Monoglyceride) is an emulsifier that is used in bread making to strengthen the dough during processing. It helps to improve texture and increase the volume in a variety of products. It is derived from vegetable sources, e.g., soybean oil. Datem is made by reacting diacetyl tartaric anhydride with mono- and diglycerides. Datem is an ivory white powder and it is dispersible in cold and hot water.
