Leeks belong to a vegetable family called the Allium vegetables, the same family garlic and onion belong to. They are native to the eastern Mediterranean and the Middle East. Dehydrated Leeks are the sliced leeks, left in the dehydrator at 135 degrees Fahrenheit for 6 hours or until leeks are crispy. They can be either rehydrated in hot water or can be used still dehydrated in soups.
