  1. Distilled Monoglycerides can be used as emulsifiers in baked goods, processed foods, dairy products, oil and fats, confectionery and frozen desserts.

Description

Monoglyceride is a glyceride obtained from glycerol and fatty acid. Distilled monoglycerides(DMG) are monoglycerides that are synthesised and undergone molecular distillation technique to separate and concentrate the monoglycerides from some diglycerides (and triglycerides). It is done because monoglycerides are considered much more effective emulsifiers than diglycerides. These are effective aerating agents and emulsifier gel products, used in baking industry for making cakes and other aerated products. They improve the quality, texture and shelf life of the products.

Selection Guide

Look for pure distilled monoglycerides with a monoester content of 90–95%.
