Description

Dried apricots are those apricots that are pitted and dehydrated. they are a valued dried fruit. There are two main kinds of dried apricots: Turkish and California. Turkish dried apricots have a bright orange color with a mild flavor while California apricots are dark orange in colour with a strong apricot flavor. Dried apricots are a good substitute for fresh apricots and can be bought dried or semi-dried. These fruits are dried either by using sulphur dioxide or naturally dried in the sun. Apricots that are small are dried whole while larger ones are dried in halves, without the kernel. Dried apricots have been used in Chinese cuisine since the 7th century A.D and they would dry the apricots by salting and smoking techniques as well. Dried apricots are mainly produced in Turkey and California. They are available year-round.

Dried apricots should be consumed in moderation as they may contain sulphur dioxide. Those with conditions like asthma can be highly sensitive to the sulfide content in them, and it might cause further breathing difficulties and also allergies.(2)
