Dried lemons are actually limes that are used heavily in the Persian Gulf and also Iranian cuisine. There are various methods of drying lemon slices and peels like open sun drying, solar drying, hot air drying, microwave drying, infrared drying, and freeze-drying. Open sun drying is a very effective and low-cost method that can be done at home under direct sunlight. Solar drying has a shorter time period of drying as compared to open sun drying and is done in a closed container to prevent contamination. Hot air drying of lemons is also a very common process that is carried out in a hot air dryer in the presence of forced ventilation. In microwave drying, friction heat is generated which results in evaporation of water and leads to drying.
