Description

Croaker fish is a species of marine ray-finned fish that belongs to family Sciaenidae. Dry Croaker Fish (Korai) is the dried form of croaker fish which helps in its preservation. It is cleaned, cut lengthwise and opened like a book. It is then salt-cured and left to dry in the sun or in a food dehydrator. It is best for drying because it is medium-large in size.
