Durum flour is basically an unbleached flour, ground from the hard wheat called “durum wheat”. It is the fine ground powder collected after the milling process . It is much finer than semolina, and resembles traditional baking flours.
Check for the "use-by" date on the packaging of durum wheat flour. Make sure it is free from moisture.
