Flavour Enhancer (627) also known as Disodium Guanylate is a food additive, which acts as a flavour enhancer. It helps improve the taste of the foods to which it is added. It is a colorless, white crystal or crystalline powder and is the natural sodium salt of guanosine monophosphate (GMP). Disodium guanylate is produced by fermentation, mostly from tapioca starch, but it can come from other sources such as yeast and sardines. This flavor enhancer is often used in conjunction with monosodium glutamate(MSG). Both are used to add a meaty or savory flavor to foods. Flavour Enhancer (627) can be labelled as "natural flavors" on a food label, so it isn't always easy to determine if a food contains this additive.
On consuming foods containing Flavour Enhancer (627), some people experience dizziness; vomiting; nausea; headaches. It may cause certain allergic reactions with symptoms like swollen tongue, eyes, lips, or face; hives(red rash); shortness of breath, cough; red, watering eyes; an itchy, runny or blocked nose.(1) Persons with gout, hyperactivity, asthmatics and aspirin sensitivity should avoid it.(2)
