Forest Honey is a type of honey, produced not from flower nectar, but from honeydew excreted by plant-sucking insects such as aphids(commonly found in the Mediterranean). This variety of honey is usually produced from trees, both deciduous and conifers. It may also be produced from grasses and plants. It is dark, honey-colored, sometimes with green fluorescence and warm, woody aroma. It is known for its low glucose levels and high mineral content. It can be used as a sweetener as a replacement for sugar. It can also be used as an important ingredient in traditional medicines like Ayurvedic treatment.
