Fresh cream is ivory colored cream with a velvety texture, made by processing and sterilising milk at high temperature. There are different types of creams such as heavy cream, light cream and a half and half. Fresh milk naturally separates into cream and milk. The cream formed at the top due to the availability of fat content. It can be used in both sweet and savoury dishes to add a rich, creamy texture.
Don't buy puffed and leaked boxes of fresh cream. Look for the one stored in a cool and dry place. Also, check for its "use-by" date.
