Description

Freshly prepared tomato onion gravy is a simple gravy made with few ingredients such as onion, tomato and spice powders. The best thing about this versatile gravy is that aside from being a base recipe, that it can be used in almost all the Indian recipes that call for onion, ginger, garlic, and tomato as base ingredients. To make this gravy, Roughly chop the onions. Peel garlic pods and ginger. Transfer these ingredients in a blender and blend until pureed. Heat oil in a pan, add cumin seeds and as it crackles add onion, ginger, and garlic paste. Cook at a medium flame until the color changes from light purple to light brown. Do stir it well to avoid burning. While the onion paste is cooking, wash and roughly chop tomatoes. Add it to a blender and blend until smooth and pureed. Stir in the pureed tomatoes and mix to combine. Cook for another 10 minutes so that the gravy is well cooked and the water is also retained. However, if you want more concentrated gravy, increase the cooking time to 15-20 minutes. Once done, allow it cool and transfer to a glass conatiner to store for future use.
