Description

GMS Powder also known as Glycerol monostearate is commonly used as an emulsifier in foods. It takes the form of a white, odorless, and sweet-tasting flaky powder. It is non-toxic & therefore very suitable for use in food formulation. It occurs naturally in the body as a by-product of the breakdown of fats and is also found in fatty foods. Glycerol monostearate is largely used in baking preparations to add "body" to the food. It is responsible for giving ice cream and whipped cream its smooth texture. It is sometimes used as an anti-staling agent in bread. The Method of incorporation of this powder is to make a stock mixture of G.M.S. in water and then use it in food preparations.
