Description

Hazelnuts grow in clusters on the hazel tree. These are small rounded grape size nuts having a broad spherical base and a pointy top and an off-white creamy colour. They have a dark brown jacket covering and the inner kernel is edible. Hazelnut syrup is one of the most commonly consumed recipe made from hazelnut. People usually buy hazelnut syrups from commercial brands but it can also be made at home from scratch. To make hazelnut syrup, preheat the oven to 160C or 320 F. Roast the hazelnuts until there is chane in color and aroma. Place hazelnuts in the a bowl and remove the skins by agitating it against a plate. Separate the skins and Place the hazelnuts on a plain surface to break it using a rolling pin. Now place sugar and water in the bowl/a large pot and bring to the boil. Add the hazelnuts and leave to boil until the mixture has reduced by about 25%. Stir it regularly to make sure it doesn't burn. Once it's reduced, strain to remove the nuts, and put them aside for crystallised hazelnuts. Strain again to remove smaller nuts, and pour into the container. Leave to cool before refrigerating. Make sure to leave for about 24 hours before having your first sip of real hazelnut syrup.

Selection Guide

If buying shelled nuts, look for skins that are tight and nuts that are plump. Old nuts will start to dry in the shell, making them lighter. Look carefully before buying.
