Description

Idli podi is a dry condiment served with idlis or dosa. There is a variation of idli podi called as gun powder which is spicy and includes more red chilies as well as garlic. It is typically prepared with chana dal, urad dal, red chilies and sesame seeds and is popularly used for idli’s as dipping condiment. It is very popular in South Indian states especially in Tamil Nadu and Andhra Pradesh. The core of the recipe remains the same across Southern India - urad dal, chana dal and red chillies. But it's the minor variations in some of the other ingredients that alter the flavour from state to state. To make this sensational gun powder at home, add a few drops of oil in a heavy bottom pan and dry roast dal, chillies and then the curry leaves one by one and keep aside. Now fry the sesame seeds till they splutter and keep them aside. Grind chillies, dal, along with the asafoetida, curry leaves and salt. Now toss the sesame seeds and grind till the mixture is ground to your preference. Once done, store the powder in an airtight jar (and not in the fridge). Avoid plastic containers as the powder may react and get spoiled.
