A prawn is basically a crustacean that resembles a big shrimp, with long antennae and a shell. They vary in colour from a dark red to an orange-red or pink. Prawns have a smooth, glossy body with an abdomen divided into several segments. They can be found in both fresh and salt water.They are available with head and even headless.
Prawns should have no black spots or melanosis on their shell, which indicates that the breakdown of the meat has begun. While buying raw prawns look for firmly attached heads and tight, firm shells with a good sheen.
