  1. Rai can be used for tempering south indian dishes like sambhar, chutney or rasam.

Rai is tiny, round seeds of mustard plant, dark brown to black in color with a slightly reddish hue to some seeds. Rai seeds shed their pods when they mature. They are widely used for seasoning purposes.
