Description

Raising Agent (INS 503) is a chemical leavening agent used in many traditional puff pastry and cookie recipes. Baker’s ammonia helps produce or stimulate the production of carbon dioxide in baked goods to impart a light texture. It is also used as a pH control agent, to change or maintain active acidity or basicity. It is chemically obtained by reacting ammonia and carbon dioxide. Since it readily degrades to gaseous ammonia and carbon dioxide upon heating, it is used as a leavening agent and also as smelling salt.
