Raw almond has a crisp, watery texture and a sweet-tart flavor, like a cross between a green apple and a green grape. The tiny seed is very soft and tastes very mild with a fresh “green” flavor, almost like biting too close to the rind of a watermelon.

Usage Tips

  1. Green almonds can be used when young and when more mature, the husk should be removed, and the inner almond should be used.
  2. They can be used in pastas, stews, and salads.
  3. They pair well with the tart flavors of arugula, watercress, and lemon; with lobster, white fish, rabbit, and lamb; and with rhubarb, apricot, asparagus, artichoke, capers, nectarines, and berries.
  4. They should be stored in the refrigerator and used within three weeks.

Description

Green almonds are recognizable by their fuzzy, green outer hull. Inside the green hull are white coloured almonds—soft and delicately nutty with a completely different texture than fully mature almonds. They are available during the first few weeks of spring.
