Sodium acetate is an organic sodium salt. It is an inexpensive chemical that has a wide range of uses, including as a food additive and pickling agent or a laboratory reagent. Sodium acetate can prevent bacteria cultivation in a wide range of acidic region. It also functions as a buffer as well. A 1:1 mixture of sodium acetate and acetic acid, is commonly used as a preservative, flavoring agent and pH adjustment in food.
