Yellow Corn Polenta is a dish prepared with cornmeal as the main ingredient, originated in northern Italy. It is a porridge or mush made from coarsely ground yellow cornmeal with 1 part cornmeal to 4 parts water and salt to taste. Though it has a creamy texture the individual grains are still tender on cooking. It can be served topped with butter and freshly grated Parmigiano-Reggiano cheese for garnish. As it cools, it hardens and can be cut into squares and served. It is considered as a tasty and gluten-free alternative to wheat-based staple foods.
