Description

Yogurt is one of the most popular fermented dairy products worldwide which has great consumer acceptability due to its health benefits. There have been various ways of consuming yogurt in out day to day lives. But very recently, the use of yogurt powders has taken the limelight. Yogurt Powder is a dehydrated yogurt that is used in place of fresh yogurt for many recipes. Cooking with Yogurt Powder is more convenient as it has a longer shelf life than fresh yogurt with good solubility. There is no standard of identity for making yogurt powders but generally they are made from cultured milk. It is typically manufactured using skimmed milk that is pasteurized. After pasteurization, the milk is cooled to incubation temperature (40-43C) and yogurt cultures are added. The product is allowed to ferment until reaching a pH of about 4.6. This is followed by spray drying and packaging.
