Asian Sesame Salad with Homemade Vinaigrette/Dressing Recipe

This salad is appreciated by everyone because of its unique blend of flavors. An array of beautiful vibrant colors & the crunch of fresh veggies & leaves make it perfect for a hot summer afternoon meal. I have used Grilled Chicken Breast here. It can be replaced with chunks of Ham or you may keep it purely vegetarian by omitting the meat.

Methods
  • 1. To Grill the Chicken:
  • 2. Trim the fat from the Chicken Breast.
  • 3. Wash thoroughly. Pat dry with paper towels.
  • 4. Prick it with a fork. Sprinkle a little salt on it & a few drops of oil.
  • 5. Set aside for about 15 minutes.
  • 6. Cook in a preheated Grill for 5-6 minutes turning halfway. *No need to turn if using an Indoor Electric Grill.
  • 7. To make the Asian Sesame Vinaigrette/Dressing:
  • 8. Dry roast the Sesame Seeds until golden & aromatic.
  • 9. Grind together with the Ginger & Garlic.
  • 10. Add the Oils, Honey & the Apple Cider Vinegar. Whisk well.
  • 11. Store in an airtight jar.
  • 12. To assemble the Salad:
  • 13. Cut the grilled Chicken Breast into thick & long strips.
  • 14. Combine the Cabbage, Carrots, Lettuce , Red Onion Slices, Chicken Strips, Slivered Almonds & Dried Cranberries.
  • 15. Drizzle some freshly made Asian Sesame Vinaigrette/Dressing. Toss.
